Sometimes the thought of turning on the oven when I have a house full of people makes me want to hide under my weighted blanket. Between the heat in the kitchen and the frantic timer-watching, it can take all the “party” out of the party! Lately, I’ve been leaning into the magic of no cook potluck recipes because they allow me to actually sit at the table and giggle with my friends instead of scrubbing burnt pans. Whether you’re heading to a sunny backyard bash or a cozy indoor knit-night, there is something so satisfying about assembling a masterpiece using nothing but fresh, raw ingredients and pantry staples.

I’ve spent the last few weeks testing out the best ways to keep things fresh and flavorful without any heat—and that includes skipping the pre-cooked store shortcuts like rotisserie chickens or steamed pasta. This is my go-to when I want something hearty but refreshing. Just toss chickpeas with diced cucumbers, cherry tomatoes, red peppers, and goat cheese. The “secret” is a heavy squeeze of lemon and a drizzle of good olive oil. It’s best served in a big ceramic bowl with some pita chips on the side for scooping up the stray bits of cheese.
