By morning, everything has melded together into something thick, creamy, and almost dessert-like.

It’s also really clean in terms of ingredients. I use an unflavored version with just one ingredient, micellar casein sourced from US farms, which means it doesn’t bring any artificial sweetness or weird aftertaste to the recipe. You control every single flavor, which is exactly how I like to cook.

  • 1 tablespoon chia seeds
  • 1 teaspoon honey or maple syrup
  • Pinch of salt

Instructions

The mashed banana sweetens everything naturally, so you can skip the honey entirely if you prefer.

This one tastes like a summer dessert, and I am not even a little sorry about it. Use the base recipe with a splash of vanilla extract stirred in. In the morning, layer sliced fresh strawberries on top and finish with a small dollop of Greek yogurt for that creamy, dreamy finish. If you can find really ripe strawberries, this needs zero additional sweetener; the fruit does all the work.

For the chocolate lovers. Add a tablespoon of unsweetened cocoa powder to the base recipe along with a teaspoon of vanilla and a little extra maple syrup to balance the bitterness. Tips for Getting the Best Results

A few things I’ve learned from making these so many times that might save you some trial and error:

  • Always stir thoroughly before refrigerating. Casein clumps more than other protein powders, so mix it well from the start.
  • Give it at least 6 hours. Overnight is ideal, but if you’re making it in the morning for the afternoon, 6 hours gets you there.
  • Adjust the liquid to your preference. If you like thicker oats, use less milk. If you prefer a looser consistency, add a splash more in the morning.
  • Use rolled oats, not instant. Instant oats go mushy overnight. Rolled oats hold their texture and give you that satisfying chew.
  • Add crunchy toppings in the morning, not the night before. Granola and nuts go soft if they sit in the jar overnight.

Honestly, the best thing about these overnight oats is how little they ask of you. Ten minutes of prep on a Sunday night and you have breakfast sorted for the whole week. Each jar comes out beautifully thick and creamy thanks to the casein, and you can rotate through the flavor variations so you never get bored.
