When I first started baking in college I found myself asking “what is a carrot cake?” I mean seriously, how had I eaten it all these years and not genuinely wondered what it was
Now I know that a carrot cake is just a layered cake with grated carrots mixed into the batter and a buttercream or cream cheese frosting
I thought a carrot cake was made out of essentially only carrots and frosting which didn’t really make any sense but I didn’t question it
What I love about these carrot cake cupcakes is the cream cheese frosting. I find carrot cake to be a lot more plain when there isn’t a lot of frosting involved, but that’s also coming from the person who’s password to most things is frosting including the security question “what is your favorite food?”
