Can we bust a little myth right off the bat? Going meatless does not mean you’re doomed to a sad, hungry hour later kind of meal. I used to think that too, until I started actually paying attention to what I was pairing together in the kitchen, and now some of my most filling meals of the week don’t have a single piece of meat in them. If you’ve ever finished a “healthy” vegetarian meal only to be raiding the pantry an hour later, these high protein vegetarian recipes are exactly what you need in your rotation.

If plant-based snacking is more your speed some days, you’ll want to check out my 20+ Best High-Protein Vegan Snacks too — they pair so well with a lot of the meals on this list. Below, I’ve rounded up 13 of my favorite high protein vegetarian recipes, from hearty dinners to easy make-ahead breakfasts, and I think they’ll change the way you think about meatless meals.

Crispy Tofu Stir Fry

Source: Skinnytaste

This is the recipe that finally made me a tofu believer. Pressing the tofu and giving it a light cornstarch coating is the secret to getting that perfectly crispy exterior, and it soaks up whatever sauce you toss it in beautifully. I love loading mine up with whatever veggies I have in the fridge and serving it over rice or cauliflower rice.

Chickpea and Lentil Curry

This curry is one of those meals that tastes like it took way more effort than it actually did. Chickpeas and lentils simmer together with warm spices and coconut milk until everything’s rich, creamy, and deeply comforting. I make a big pot on Sundays so I have protein-packed lunches ready for the whole week.

Quinoa Black Bean Burgers

These patties hold together so much better than I expected for a meatless burger, and they’re packed with protein from both the quinoa and the black beans. I love making a batch ahead and freezing them so I always have a quick dinner option on hand. Top with your favorite burger fixings and you’d never miss the meat.

High Protein Cottage Cheese Pasta

I was skeptical about cottage cheese in pasta sauce too, but blending it completely transforms the texture into something silky and rich, almost like a vodka sauce. It’s such a sneaky way to add a big protein boost to a classic comfort food dinner. My family has no idea cottage cheese is even in there.

Paneer Tikka

If you’ve never cooked with paneer before, this is the recipe to start with. The cheese gets marinated in a spiced yogurt mixture, then grilled or broiled alongside peppers and onions until slightly charred and smoky. Paneer holds its shape beautifully and packs a serious protein punch, so this always feels like a full meal.

Grilled Halloumi Salad

Halloumi is one of my favorite discoveries as a vegetarian cook, since it holds its shape when grilled and gets this incredible golden crust. Paired with crispy chickpeas and a big bed of greens, this salad is hearty enough to be dinner on its own. I could honestly eat this every week and not get tired of it.

Rainbow Edamame Salad

This salad is so colorful and crunchy, and edamame gives it a serious protein boost that keeps it from feeling like just a side dish. I love the sesame-ginger dressing tying everything together, and it holds up really well in the fridge if you want to meal prep it for the week.

Three Bean Vegetarian Chili

This chili is proof that you don’t need meat to make something hearty and warming. A mix of black beans, pinto beans, and kidney beans gives it that satisfying, stick-to-your-ribs texture, while the veggies and spices keep every bite flavorful. I make a big batch and freeze half for busy weeknights.

High Protein Overnight Oats

Mornings are so much easier when breakfast is already waiting for me in the fridge. Greek yogurt and chia seeds stirred into the oats give this version a serious protein boost compared to your average bowl of oatmeal, and it keeps me full well past lunchtime. Top with fruit and you’re set for the week.

Vegetarian Kimchi Fried Rice

This one’s got so much flavor packed into it. Tangy kimchi, fluffy scrambled eggs, and protein-rich edamame get tossed together with rice for a dish that’s savory, a little spicy, and endlessly satisfying. It’s one of my favorite ways to use up leftover rice too.

Red Lentil Dal

This dal has become one of my most-made weeknight dinners. Red lentils cook down quickly into a creamy, spiced, coconut milk-based stew that’s ready in about 30 minutes but tastes like it simmered all day. Serve it with rice or warm naan and you’ve got yourself a seriously cozy meal.

Quinoa, Lentil, and Black Bean Burrito Bowl

This bowl is one of my favorite ways to use up whatever’s in my pantry. Quinoa, lentils, and black beans come together for a serious protein trifecta, and roasted peppers and onions add so much flavor without much effort. I love making a big batch of each component and building bowls throughout the week.

Curried Chickpea Salad

This salad is my go-to when I want something that feels like a treat but comes together in ten minutes. Mashed chickpeas get tossed in a creamy curry dressing for a texture that’s honestly reminiscent of chicken salad, minus the chicken. It’s perfect in a wrap, on toast, or scooped up with crackers.

Whether you’re vegetarian full time or just trying to work in a few more meatless meals each week, I hope this list of high protein vegetarian recipes gives you plenty of new dinners (and breakfasts!) to fall in love with.
